Chilled Corn and Avocado Soup

Ingredients:

(Serves 4)

  • 1 Avocado
  • 3 1/2 Cups Fresh Organic White Corn or Frozen, Thawed (1/2 cup reserved for garnish)
  • 1/2 of a Seedless English Cucumber
  • 1 Jalapeno, seeded
  • 1/2 Bunch of Cilantro
  • Juice of 4 limes
  • 1 Small Garlic clove
  • 1/4 Red onion
  • 14 oz Filtered water
  • 1 tsp Sea salt
  • Fresh ground pepper to taste
 

On a warm summer day, we love to cool down with a refreshing chilled soup. For soup lovers, cold soups are a great way to beat the heat and enjoy the best ingredients the summer has to offer!

This soup combines fresh corn, cucumber and creamy avocado with zesty cilantro, lime and a touch of jalapeno for a soup that bursts with summer flavor.

Instructions:

  1. Prepare the ingredients and place in a blender. Puree until smooth. Taste for seasoning and adjust as needed.
  2. Chill for at least 2 hours before serving.
  3. Serve in bowls and garnish with fresh chopped cilantro, the remaining corn. If desired, add a lime wedge and a drizzle of olive oil or a dollop of Greek yogurt.
